St Patrick’s Day Shamrock Biscuits

Indulge in a little sweet treat on St Patrick’s Day with these shortbread biscuits – a fun, colourful way to mark the day.
Before you start, preheat the oven to 180ºC/350ºF/Gas Mark 4 and lightly grease a baking tray.
- Cream together the butter with the sugar. Stir in the Juvela Mix and the egg yolk. Bring together to form a dough.
- Sprinkle surface with Mix and knead lightly until smooth. Roll out and cut into the desired shape using a cookie/pastry cutter and place well apart on the baking tray.
- Bake in a pre-heated oven for 10 - 15 minutes until golden brown. Allow to cool before moving or adding toppings.
- Using the same pastry cutter cut out shapes in fondant icing and place on top of your biscuit. Alternatively make some glace icing by mixing icing sugar with a little water and adding some green colouring. Spread the icing over the top of each biscuit.

50 g (2oz) caster sugar
