The declaration form must be completed and returned to the Coeliac Society of Ireland. The form includes the details of personnel nominated for training, and the Kitchen Safety Checklist. Your venue(s) must meet all conditions specified in the Kitchen Safety Checklist. The Declaration form must be signed by the owner/manager of the business.
The aim of the programme is that all staff involved in the preparation and serving of food should complete the on-line Gluten free training. The designated number of personnel will be the Owner/Manager and Head Chef, who will have undertaken the training, and that at least one trained person is present in each operational centre* at all times.
* An operational centre is defined as a location where storing, preparation, cooking/baking, handling and /or serving food takes place.
As an introductory offer, a flat rate fee of €300 is charged for the first year.
Spot Checks: The Coeliac Society of Ireland will undertake random spot checks of businesses who are registered for the Pledge.
