Best flour to use for baking cakes.

Your suggestions would be much appreciated on this please. When baking cakes which is the best flour to use, self raising or a bread mix? If a bread mix, would you still add xanthan gum? Thanks guys :P

I use Doves Farm plain flour or Juvela white mix. Add baking powder to both.

I use a mixture of Doves Farm plain white flour for biscuits, but for sponge cakes and fairy buns, i use the Odlums White Bread Mix, its makes great sponges. For pastry i used doves farm or Oldlum Tritamyl with a pinch of Xanthan Gum.

could you please check the name of your white bread mix
I have ask the chemist for juvela white bread mix
but she said it is not on the list. I know I have got it before
but maybe I have the wrong name Thanks

Hi Moly. I think what's confusing your pharmacist is that you are asking for "bread" mix. It is Juvela all purpose "white mix". Still on the list, as far as I know. Only got it this month!
