Hi Vony,
I am just back from Tenerife and I had the same worries as you. We went self-catering just in case. I took my eating out card (which was very beneficial) and there was no problem at all! I suggest you stay away from the places advertising British/Irish brekkies, beer batter fish etc... We ate mainly in traditional restaurants and ate like queens as all the food was freshly prepared and unprocessed. Also a lot of their food in the shops have the GF symbol if it if GF and ALL their GF ice lolly’s are labelled! There was also alot of LAYS crisps labelled GF (salt and vinegar, ready salted). So you should be stuck for snacks on the go.
I know Tenerife isn’t Lanzarote but I’m lend to believe that it is the same all over those islands as it is Spanish law there to have all food labelled.
I would suggest that if you are going to any waterparks or the such I would bring a packed lunch as they didn’t have much options for coeliac's - this has been the case in Tenerife and Portugal, so Id guess it’s the same in Lanzarote.
Sorry I don’t have exact names of places for you to go but I hope this is some help to you.

Vony,
I was in lanzarote this time last year.....think i even posted up the places on the travel section a few months ago for someone else. Anyway I was in puerto del carmen and it was FANTASTIC!!! have been in the USA, Canada, Asia and other parts of europe since diagnosis and P. del C was the best for coeliacs! Just bring the spanish eating out card and they are know straight away. I have GF -pizzas, pastas etc no problem. Now not everywhere but there was still lots of choice for me. Trying to remember any names for you and of course none come to mind....there was an italian in front of the fariones hotel at the old town end of the strip, up near the shopping centre a place called el tomato, maritonis on the main strip (looks a bit dodge from outside but does a roaring trade and LOVELY food!)...cant remember the rest. The shops have GF ice-creams. I brought my own bread alright. so you'll have a great time!
Enjoy
