Hey all,
Just back from a trip to Maastricht. I had a lovely gluten-free meal in Restaurant 't Orgelke (Bistro 't Orgelke) on Tongersestraat 40, Maastricht
Phone: 043-3216982, http://www.orgelke.nl/. The chef and owner are very knowledgeable about the gluten-free diet and they serve traditional Dutch dishes.
I found the restaurant using the website http://en.dinnersite.nl/. It allows you to search by Diet and location and has listings for all over the Netherlands. There's a Belgian version of the site in the making, but it didn't have any listings for around Liége when I looked.
