Pepper Sauce

Postby countrylass » Thu Sep 22, 2011 9:31 am

Hi Folks,

Does anyone out there have a receipe for pepper sauce, the kind you get in a restaurant - smooth and creamy and just the right amount of peppers. Have this longing for steak and pepper sauce!

I make my own version of pepper sauce. I saute some mushrooms in butter, add creme fraiche and freshly crushed whole peppercorns using pestle and mortar (couple of teaspoons) and let it all heat. You can obviously leave out the mushrooms. Just put the peppercorns in cold pan and put over a low heat. When they are gently warmed, add the creme fraiche and heat. I use Lidl creme fraiche as I find some of the others split during cooking or are too watery. I'm in the mood now for a lovely big juicy steak and pepper sauce
