Yummy GF Cup Cakes- Lemon Curd & Coconut
I made these cupcakes at the weekend and they are probably the nicest GF sponge based thing I've had since being diagnosed!
I used lime curd instead of lemon and the yoghurt, coconut and lime curd made the sponge really moist. It's not actually a gluten free recipe- I used Odlums Trytamyl Self Raising Flour and GF baking powder.

They sound like a good idea. Will try some with lemon curd. I usually make the lemon curd myself as the only one I could find that is gf in the book is Big Red Kitchen - which I've never seen anywhere! Just had a look in the book for gf lime curd and can't find it. Which one do you use, Yvey?

I use the Cottage Delight one, the lady in the health food shop told my mam it's GF

I see that in the book now. Must be my age
I see from the book that Supervalu stock it, so I must get some next time I go shopping. Haven't had any in ages - thanks, Yvey

If your close to Churchtown in Dublin the "gourmet" store next to Supervalu do loads of Cottage Delight stuff- both the Lime and Lemon curd are really nice.

Oh My, these sound yummy, I'm going to drop into the Gourmet Store in churchtown tomorrow after work, and make these, thanks for posting Yvey

I made these the other day. Didn't follow the recipe as such. Just made my usual muffins with the Juvela mix and added the lemon curd and coconut. They were delicious. Would never have thought of using lemon curd and coconut. Thanks Yvey.

I tried these and they were a disaster
They refused to cook and were an oily mess, i dont know what went wrong, because i followed the recipe, I think i'll try your idea Jess and just used my Glutafin/Juevella and add coconut and Lemon Curd

I've made a few batches of them at this stage,using Juvela and their sponge recipe. I add the same quantity of lemon curd and coconut as in the recipe that Yvey posted. Haven't failed yet and they freeze well also. I would often do that with recipes I find. I use a tried and tested base and add the flavourings and they usually turn out fine.

That's a pity- hopefully they'll work for you using the Juvela mix.

I tried these again, using my own, recipe for fairy buns, but just added the coconut and a small amount of Lemon curd, they turned out very tasty, even the non-coeliacs robbed them on me!
