Ginger Spice Cake

Introduction: 
Classic ginger cake - with its soft dark crumb and spicy ginger tang, it's one of the best teatime treats around!
Notes: 

Stays fresh and moist, and some would say tastes even better a couple of days after baking if kept wrapped in foil or an airtight container.

Preparation: 

Before you start, pre-heat the oven to 180°C/350°F/Gas Mark 4, and grease and base line a 2lb loaf tin.

Ingredients: 

150g (6oz) butter or margarine
150g (6oz) soft brown sugar
150g (6oz) Juvela Gluten-Free mix
1tsp ground ginger*
1tsp cinnamon*
1tsp nutmeg*
2 medium eggs, lightly beaten

* Please check the Food List for suitable gluten-free brands.

Method: 
  • Melt the butter or margerine and sugar together in a pan.
  • Remove from the heat and stir in the Juvela Mix, ginger, cinnamon, nutmeg and eggs. Beat well until smooth and pour into the prepared tin.
  • Bake in a pre-heated oven for 40-45 minutes. Allow to cool on a wire rack.
