Mincemeat Muffins

Introduction: 
A simple muffin recipe with a festive twist - easy to make, bake and freeze!
Preparation: 

Pre-heat the oven to 190°C/375°F/Gas Mark 5. Line a muffin tin/mini-muffin tin with paper cases.

Ingredients: 

100g (4oz) soft margarine
100g (4oz) caster sugar
1tsp vanilla essence*
200g (8oz) Juvela Gluten-Free Mix
1tsp baking powder*
1tsp mixed spice*
4 medium eggs (beaten)
6tbsp mincemeat*

* Please check the Food List for suitable gluten-free brands.

Method: 
  • Mix together all the ingredients until light and fluffy.
  • Divide between muffin cases.
  • Bake in a pre-heated oven for 15-20 minutes until golden and firm to touch.
  • Dust with some icing sugar.
