Anne's Mince Pies

Introduction: 
Make your own delicious gluten-free mince pies from scratch this year with homemade mincemeat!
Preparation: 

For the mince meat, sterilize some empty jam jars for storing.

For the pastry, you can either make your own or buy a suitable pastry mix and prepare as per packet instructions.

For the mince pies, grease a 12 cup bun tin and dust with a little gluten-free flour. Pre-heat the oven to 190°C/375°F/Gas Mark 5.

Ingredients: 

3 oz (85g) Sultanas *,
2 oz (57g) Raisins *,
3 oz (85g) Currants *,
2 oz (57g) Soft Brown Sugar,
2 oz (57g) Melted Soft Margarine,
1 Medium Eating Apple (grated),
2 oz (57g) Chopped Almonds *,
1/2 teaspoon Mixed Spice *,
1/2 teaspoon Cinnamon *,
1/2 teaspoon Nutmeg *,
Grated Rind of 1 Orange,
Orange Juice or Brandy to moisten.

* Please check the Food List for suitable gluten-free brands.

Method: 

For the mincemeat:

  • Mix all ingredients together and moisten with brandy or orange juice.
    Store in covered jars in fridge until ready to use. Keeps for several weeks.

For the pies:

  • Knead pastry well on a surface lightly dusted with gluten-free flour, then roll out and cut out rounds to line bun/tartlet tins.
  • Place a spoonful of mincemeat in each, so that each is about ⅔rds full.
  • Roll out remainder of pastry and cut out star shapes to complete covering the pies.
  • Brush with beaten egg and bake in a pre-heated oven for 15-20 minutes until golden brown.
