Really Rich Chocolate Muffins

Introduction: 
The ultimate chocolate muffin for all you chocoholics out there - prepare for chocolate heaven!
Preparation: 

Line a muffin tray with paper cases and pre-heat the oven to 180°C/350°F/Gas Mark 4.

Ingredients: 

1tsp gluten free baking powder*
2tbsp good quality cocoa*
3 medium eggs
200g (8oz) butter
150g (6oz) golden caster sugar
125ml (5fl oz) milk
200g (8oz) dark chocolate* (with less than 50% cocoa solids)
200g (8oz) Juvela Gluten-Free Mix

* Please check the Food List for suitable gluten-free brands.

Method: 
  • In a large bowl, melt the butter and chocolate together, either in a microwave or over a pan of simmering water, stirring occasionally. Allow to cool slightly.
  • Meanwhile, in another large bowl, combine the Mix, baking powder, cocoa and sugar. Whisk together the eggs and milk and add to the dry ingredients, along with the melted chocolate.
  • Beat together until thoroughly combined.
  • Spoon mixture into muffin cases and bake in a pre-heated oven for about 15-20 minutes until well risen and firm to touch.
  • Allow to cool on a wire rack.
